Vegetable Poha
A Light and Nutritious Breakfast or Snack

Ingredients
1/2 cup yellow moong dal (split yellow lentils)
2 cups water (for cooking)
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp ginger, grated
1 tbsp ghee (clarified butter)
1 tbsp fresh coriander, chopped
Instructions
Heat oil in a pan, add mustard seeds, and let them splutter.
Add vegetables and turmeric powder, sauté for 5 minutes.
Mix in the rinsed poha and cook for 3-4 minutes.
Garnish with coriander and squeeze lemon juice before serving.
