Vegetable Poha

Ingredients

  • 1/2 cup yellow moong dal (split yellow lentils)
  • 2 cups water (for cooking)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp ginger, grated
  • 1 tbsp ghee (clarified butter)
  • 1 tbsp fresh coriander, chopped

Instructions

  • Heat oil in a pan, add mustard seeds, and let them splutter.
  • Add vegetables and turmeric powder, sauté for 5 minutes.
  • Mix in the rinsed poha and cook for 3-4 minutes.
  • Garnish with coriander and squeeze lemon juice before serving.
