Low-Sodium Vegetable Pulao

Ingredients

  • 1/2 cup basmati rice, rinsed
  • 1/2 cup mixed vegetables (carrot, green beans, peas)
  • 1 tbsp oil
  • 1 bay leaf
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 cup water

Instructions

  • Heat oil in a pan, add cumin seeds and bay leaf, and sauté for 30 seconds.
  • Add vegetables, turmeric, and sauté for 2-3 minutes.
  • Stir in rice and water, then cook on low heat until rice is tender.
  • Serve with a side of low-sodium yogurt
